MODULE NO / UNIT COURSE SYLLABUS CONTENTS OF MODULE NOTES
1 1. Nutrients in food- Definition, classification, structure, general properties, digestion, absorption and metabolism of Carbohydrates, Proteins, Nucleic acids, Lipids (including iodine number, Acid value and Saponification value).
2. Hormones: Chemical classes, mechanism of actions of hormones.
2 1. Chemistry, physiological importance of fat soluble vitamins (A, D, E and K) and water soluble vitamins- B1, B2, B6, B12 niacin, folic acid and vitamin C.
2. Biological role of Macro minerals (calcium, magnesium, phosphorus, sodium, potassium) and micro minerals (Iron, iodine, fluorine, zinc, copper, selenium, cobalt).
3. Enzymes- Definition, chemical nature, classification, importance and factors affecting enzyme activity. Co-factor, co-enzyme.
